Special Instructions

1.
Sparged with 1 gallon of acidified water.
2.
Fermentable molasses and 1 star anise added for 15 minute whirlpool at 180F post-boil.
3.
Fermented directly on a cake of WLP 833 from a helles. 48F for 5 days then ramped up to 60F over 5 days. Let ferment for 3 weeks total.
4.
Kegged with 2oz addition of blackstrap molasses

Notes:

Hit numbers dead on. Very good winter beer after a couple months lagering in the keg. A little too sweet - I'll skip the keg molasses addition and bump up pils malt:specialty malt ratio next time (and there will definitely be a next time).
