Special Instructions

1.
Mill Carafa separately set aside until sparging
2.
Dough-in 99F
3.
Raise temperature to 126F and rest for 5 min.
4.
Pull about one third of the mash for a decoction. Raise this portion to 145F, rest for 5 min.
5.
Raise decoction to 162F, rest 15 min.
6.
Bring decoction to a boil. Boil 15 min.
7.
Return decoction to main mash, mix, bringing full mash to about 144F.
8.
Pull about one third of mash for second decoction.
9.
Raise decoction to 162F, Rest for 15 min.
10.
Return second decoction to main mash, mix, bringing full mash to about 165F, rest 10 min
11.
Mashout 10 min
12.
Begin runoff into boil kettle and sparge. Add Carafa.
13.
Collect amount according to Brew Session.
14.
Boil 90 minutes adding hops according to the schedule.
15.
2.2g Yeast Nutrient and Whirlfloc boil 15 min
16.
Chill to about 46F, aerate, pitch yeast starter.
17.
Ferment at about 51F for 10 days or until within 2-5 gravity points of FG 1.015
18.
Conduct diacetyl rest at 65F-68F https://www.brewcabin.com/diacetyl-rest/
19.
Drop temperature to 37F. Lager for at least 8 weeks.
