Special Instructions

1.
clean, rinse all brewing equipment then setup kit
2.
Heat strike water to 69.5 ? in boiler
3.
Heat mash tun with kettle full of boiling water then discard
4.
Empty all grain (including sugar) into mash tun
5.
Mash in with 16 litres at 64.5 ? for 80 minutes
6.
Increase boiler water temperature to 75 ?
7.
Add 3-4 litres boiling water for second mash step at 68 ? for 10 minutes
8.
Add 2-4 litres of boiling water for Mash out at 75 ?
9.
place large plastic bucket to collect wort. Attach hose so runnings can collect in the bottom of bucket without splashing
10.
hold jug under mash tun tap to collect "first runnings"
11.
recirculate first few litres until the wort runs clear
12.
When grain bed becomes uncovered, sparge with 6 litres of water at 75 ? or enough for 29 litres going into the boil
13.
Stop mash tun tap when brew bucket contains 29 litres of wort
14.
empty boiler and add first wort hops to boiler
15.
remove mashtun from table and replace with wort bucket. Attach hose to wort bucket
16.
place boiler underneath wort bucket and slowly fill boiler with wort
17.
lift boiler in place for boiling
18.
at 29 litres full take a hydrometer reading in the boiler for OG. Add DME/sugar if necessary
19.
boil for 50 minutes then add whirlfloc tablet and boil hops for a further 10 minutes
20.
Attach hoses to copper chiller and test before inserting insert into boiler with 15 minutes to go. Ensure tie wraps are used for hose terminations
21.
at 60 minutes boil turn off boiler and then turn on tap for chiller
22.
at 78 ? add flame out hops to boil for 30 minutes!
23.
sanitise brewing carboy
24.
wait until wort has reached 19 ? then turn off chiller
25.
take final OG reading of wort
26.
sanitise hose and attach hose to boiler then transfer wort into carboy
27.
pitch yeast from flask into carboy and place into water bath
28.
fit sanitised bubbler to carboy
29.
add water and heater/thermometer to water bath ensuring water is 20 ?
