Special Instructions
1.Water chemistry: 0.5 tsp gypsum, pinch of both magnesium/pickling salt.
2.Adjust pre-grain water to a pH of 5.9. Check mash pH (5.2 - 5.4). 35 drops of 88% lactic acid got me to 5.9 in my Common Cream Lager recipe.
3.For 11 lbs of grain at 70 F ... use 6 gal strike water at 153 F for target mash temp of 150 F.
4.Reverse step mash: 150 F -> 142 F -> 156 F -> 170 F
5.Sparge grains to a boil volume of 6.5 gallons
6.30 minute boil with hop additions as above.
7.Cool the wort down to 60 F and aerate for an hour with pump.
