Special Instructions

1.
Added 1 tsp gypsum to 8.5 gallons pre-mash water.
2.
Added 5 grams of ascorbic acid into pre-mash water, this brought pH down to 4.2 so had to add 1/2 tsp of baking soda to get pH = 5.9.
3.
Glucabuster in the mash. Brutzyme during fermentation.

Made a 1.5 litre yeast starter with the Nottingham.
