Special Instructions

Oct 3/21: Mashed in with 14.5L, 4ml phosphoric, 2.5g CaSO4 and 3g CaCl
2.
Hit 68.5c, 45 minute mash.

Sparged with 20.5L, 4.5ml phosphoric, 2.8g CaSO4 and 3.5g CaCl
4.
59c mash, 80c water. Hit 70.5c mashout. 20 minute timer.
5.
Honey in at 13 minutes left in the boil.

Oct 3/21 12pm: Pitched into 30c wort. Into FC set to 32c.
7.
Made tincture of 3oz cherry liqueur, 2 split vanilla beans and 3 halved cinnamon sticks.
8.
Oct 4/21 5pm: FC up to 34c with Lingonberry bucket to pre-heat.
9.
Oct 4/21 730pm: Added 2L lingonberry and tincture.
10.
Oct 7/21 7am: Stopped actively heating.
11.
Oct 22/21: Bottling...night: Added 5.4oz dextrose to 18.5L at 34c for 2.6 volumes
