Mash Steps

Special Instructions

1.
17 lts Mash water. 1 hr at 65C
2.
Then to 75C for 10 mins mash-out. Then sparge
3.
15gs of Citra hops washed during spargin, Sparge with 14lts water. Very slow.
4.
Then on to boil. First hops in for 45 mins
5.
2nd hops plus sugars in for 30mins. Half Protofloc tab added for 10 mins of boil
6.
Flame out then Hop stand with Citra @ 70C Dextrose added at end of boil. !0 mins.
7.
23 lts collected - Yeast added at 20C 'Pure Brew' added at the same time. SG 1.063
8.
Fermenting well after 24 hrs.
9.
2 days after brewing - 30 gms of Citra into brew. Fermenting very fast at 20C.
10.
Racked on 29th June, three days after brewing. Fermentation almost done. Very fast!
11.
Secondary ferm barrel flushed with CO2 before transfer
12.
Into cellar then after2 day Cold Crashed for 3 days days
13.
Batch primed with 60gms Dex. SG1.00
