Special Instructions

Ferment at 75oF for 2 weeks
2.
Siphon to secondary fermentor, and condition at 40 deg F for 4 weeks
3.
Bottle and store at 50-60 deg F for 3 months

Notes:

The torrefied malts rendered a dark brown color not reflective of a saison. The cinnamon and coriander resulted in a spicy finish, that some found too hot. The beer reminded me more of a good stout rather than a saison.

    leave out the torrified malts and dial back the cinnamon a touch if you brew this.
