Special Instructions
1.15gal of strike water (2.1428 qt/lb of grain) with 19.12g 88% lactic acid
2.Add 13.1g gypsum, 3.6g calcium chloride, 1.7g epsom salt & 1.4g salt to strike water
3.Fill HLT to 9gal & add 15.85g of 88% lactic acid
4.Add 7.8g gypsum, 2.2g calcium chloride, 1g epsom salt & 0.8g salt to HLT
5.Mash @ 145F for 60 minutes then stir/direct heat to 156F
6.Rest mash at 156F for 20 minutes then direct heat/stir to hit 170F
7.3gal absorbed by grain (.5 qt/lb of grain loss)
8.Recirculate till wort runs clear then collect 6 gallons before adding sparge water
9.Fly sparge with 9 gallons heated to 180F
10.Add Irish Moss & Yeast Nutrient with 10 min left in boil
