Started heating about 20L water for brew at 11:30AM Jan 17, 2021. Cloudy no rain slightly breezy. Mixed rice hulls with grains. Plan to add dme after mash during external sparge while level is low. Hops are ready. No extra additives, except a dash of amylase. Not using towel coozy because it hasn't been. Leaned from last use. Will strike a bit higher in lieu of towel. Start mash at 12:20PM Strike at 166F Target mash at 146F Actual mash at... Data point: 156F at 12:25PM after stir and amylase addition. Lid on. No coozy. Temp is right between medium and sweet starch conversion. Data point: 138F at 12:50PM heated for five minutes and stirred well. Added another half tsp amylase. Temp railing: 147F at 12:55PM Data point: 146F at 1:00PM Data point: 146F at 1:08PM Data point: 142F at 1:18PM Sparge in ~12L at 1:20PM Heating majority of wort. Reached boil at 2:20PM. Need to add last two litres and bring to boil again. This was to avoid boil over from DME. Total wort reached boil at 2:40PM. Add first hops at 3:10PM. Add second hops at 3:40PM. Add final hops at 3:57. Flame out 4:07
