37 days after bottling, in my Weizen glass (the only one that fits the 650ml bottles). It has really cleared up and for a Saison it is actually rather transparent. It has the same smells and tastes as before but it has really come together quite nicely now with nothing jutting out as it once did. Next time I would possibly forgo the C-120 and perhaps the CaraRed and sub it all for Special B, also adding more late hops. This is almost like a very dry Saison IPA but it needs more hopping business. Still, a winner in my books and the pals really seemed to enjoy it.
16 days after bottling. It looked very clear in the bottle but upon opening it I was greeted with a gusher. I am hoping this is just a side-effect of it being early times still and also a high carbonation level.
The beer is a wonderful caramel amber colour with an off-white actively foamy head that sticks around, lacing well. Black pepper, coriander, bubblegum, basement, cucumber, cereal, caramel, sea salt and slight citrus comprise the scent.
The flavour, while matching well, is masked by "green" flavours and a slight alcohol taste. Not hot tasting but not entirely pleasant. Body-wise, it doesn't actually feel that carbonated and needs some more time in the bottle before being worth enjoying.
