Brewed 10/4/20 Never brewed the second half of the Festbier yeast experiment, so I went back to the recipe and used Imperilal Pilgrimage instead of WLP820. Decocted around 136-138 then mashed really low around 146-148. pH was a bit high around 5.6-5.7 even with 4g LA and 3g CaCL. Added more LA during the boil but only got down to 5.4ish. Added some more during the chill to get it down to 5.2-5.25. Transferred onto the yeast cake of a Helles but the volume was a bit low and gravity high (overboiled, 1.063) so I boiled some additional run off and added that - this was too much volume (do the math!!!) and dropped the gravity down too much. Not the worst thing - should come in around 5.5% instead of 6%. OG = 1.053-54 Addition of wort brought the temp up to 74* - cooled overnight down to 44-46*. Some activity by the 14 hour mark, letting the temp rise from mid 40s to high 40s to ramp up fermentation. Will keep it around 48-50* for the initial week or so. Then brought it up to 56* for 7-10 days. Let it sit at room temp (70ish) for 2-3 days, then started to cool crash around 10/21. Down to 33* on 10/23. Only lagered for a couple of days because Shmo slugged down the last Andechs beer real quick... FG 1013 Took a week to clean up and a couple weeks to clarify. Really good at just a month or so though. Somewhat bitter, surprising, but just about right. Nice amount of body, could be a point or two lower to dry it out - that's just the yeast. Could be a bit more crisp - get that pH down.
