Special Instructions

Mashed at 155F for 75 minutes

Pre-boil wort was 1.085, temperature and volume corrected, so 59% efficiency

Molasses contributed only 1/2 anticipated gravity points.

Post-boil wort was 1.090 at 60F. Pitched 30G S-04, hydrated.
5.
Into fermentation chamber set to 10C /- 1C.

Notes:

In my Snifter, 25 days after bottling. Regular version. Very black with a nice tan head that starts creamy, sticks around and looks a bit oily after a minute or two. Notes of milk chocolate, cranberry, molasses, vanilla and smooth, milky coffee strike me. Temperature of 54F. The taste is all of the above, still quite tart up front and coupled with a slight alcohol flavour, smooth and not solventy, very welcome. The mouthfeel is wonderful, thick but also with enough carbonation that it does not feel cloying. Instead, it leaves a rich tart flavour coupled with chocolate and coffee, well balanced bittersweetness. I am extremely pleased with how this is coming along. Although it needs some aging in the cellar to mellow it is a really fine recipe and I am excited for folks to receive it as a gift!
