Special Instructions

1.
mash grains (2.25#) in 3.15 qts water at 156° for 1 hour
2.
drain to kettle and add 3 qts water at 170° to mash tun, let sit for 1/2 hr

drain to kettle and start boil
4.
At boil, add 0.75 oz hops
5.
at 45 min, insert chiller
6.
at 50 min, shut off burner and add in 0.25 oz hops and 2# DME, stirring well
7.
re-light burner and resume boil for 10 minutes
8.
start yeast rehydration in 86-95° water, gently stir and let rest for 15 minutes stir again and let rest 5 minutes before pitching
9.
chill to 75-76°, transfer to bucket amd add yeast
