An IPA with a deep red color and high hop bitterness with tropical fruit and citrus hop flavors sweetened with caramel malt and the El Dorado hops. Mashed at low temps for a dry finish. Hops: Simcoe (0.5), Amarillo (0.5), Cascade (1.0), El Dorado (0.5x2), Mosaic (0.5x2), Dry hop with El Dorado (0.5), Mosaic (0.5) Malts: 2-row Pale (12), Cara-Red (1), Crystal 80 (.75), 60 (0.5), and flaked barley (0.5)

Mash Steps

No mash steps in this recipe

Special Instructions

1.
Mash all grains for 1 hour at 150 degrees.
2.
Sparge at 168 degrees.
3.
One hour boil with hop regimen above.
4.
Ferment at 63-68 degrees for 1 week.
5.
Rack to secondary with dry hops for 2 weeks.
6.
Rack to keg, cold crash for 3 days.

Notes:

Racked to keg 4/19 without dry hopping. Nice aroma of citrus fruitiness and has a sweet after-taste. Will know more as it reaches carbonation. Figured the sweet El Dorado hops will be accentuated through carbonation, so eliminated them from dry hopping to be on the safe side. I had a quart left over so enjoyed that with my sirloin.

    Substituted 20C for Cara red and 45C for 60C (original values are in description). Also, used Mangrove Jack M44 West Coast yeast in place of S-05.

    Stated fermenting today. Unsure of the strength of the candy-like El Dorodo hops, so will taste test before dry hopping. I'll let you know!
