Special Instructions

1.
Heat 7.5 gallons of liquor to 148 degrees Fahrenheit.
2.
Add grain bag to water and perform Saccharification Rest for 75 minutes, stirring every 15 minutes and reheating water to 154 degrees as the water falls below 150 degrees.
3.
Bring water up to 168 degrees for 10 minute Mash-Out.
4.
Remove grain from water and bring it to a boil.
5.
As the water begins to boil, add 1 ounce of EKG hops.
6.
Boil for 60 minutes.
7.
Cool rapidly to room temperature and pitch WLP004 yeast.
8.
Ferment at 66 degrees Fahrenheit. Keep in primary for 7 days and rack to secondary.
9.
Keep in secondary 1-3 weeks.
