Special Instructions

1.
Mash of 4 gallons with 2.0g gypsum, 4.60g CaCl, 0.3mL lactic
2.
Sparge of 1 gallon with 0.50g gypsum, 1.15g CaCl, no lactic

Yeast nutrient in at 15 minutes
4.
Flame out hops in with lid on for 10 minutes prior to chilling

Notes:

Pours a hazy dark yellow, not quite orange, with 2 fingers of fluffy foam that doesn't dissipate. Aroma is a resin and pine with a touch of grapefruit and yeastiness. Flavor is a bready wit flavor, kind of a light yeast phenolic, that picks up some bitterness in the middle and ends with a slightly assertive bitterness and a breath of fruity yeast. The body is medium and the only slightly sharp. Overall, the beer is okay as it is an interesting conflation of styles, wit and IPA, but it doesn't make you want to drink another one. If I were to brew this again, I would drop the IBUs and focus on fruitier leaning hops. 3 stars.
