Ferment @ 53F until SG 1.031 then ramp 4F/day up to 72F.

Once FG stable for 3 days, cold crash 3 days.

Transfer to serving keg on top of gelatin for 4 days then dump trub.

Lager for 3 weeks.
5.
Bottle condition for 2 weeks.
