Mash Steps

Special Instructions

1.
After mash is done recirculate wort for 30 minutes
2.
After 30 minute re-circulation transfer wort to brew kettle. This will take 2 to 3 hours
3.
Fill brew kettle to 16.5 barrels
4.
Boil wort for 60 minutes
5.
Once boil is done rest wort for 10 minutes
6.
Then whirlpool the wort for 10 minutes
7.
After that rest wort for 10 minutes
8.
While wort is going through rest periods add yeast to the empty fermentor before transferring the wort
9.
Transfer the wort to the ferrmentor thru heat exchanger at a temperature of 68 degrees and aerate for the whole transfer. Which will take 2 to 3 hours
10.
Set fermentor temperature to 68 F
11.
Ferment at 69 F for 10 days
12.
After 7 days turn temperature down to 40 F for 4 days
13.
Transfer beer after fermentation to bright tank and carbonate beer for 8 hrs for a volume of 2.50 of CO2.
14.
Age beer for a week
15.
The beer can be served or kegged off
