Special Instructions

150 ppm Chloride, 50 ppm Sulfate.

5.4 mash pH.

Ferment in shed for two weeks. Move inside and dry hop for five days. Bottle and cork condition upstairs for 50 days.

Continue to age bottles downstairs in cellar conditions on cork.

Brew Day: 9/22/19, Dry hop: 10/6/19, Bottle: 10/11/19, Lager: 11/30/19 (25 days to cold storage for Christmas, 32 for New Years).

12 bottles will be inoculated with Brett. First taste at five months (3/11/20), one bottle for One Year (Christmas 2021), Two Year (Christmas 2022), and Three Year (Christmas 2023) aging.
7.
Wyeast 5151-PC BRETTANOMYCES CLAUSSENII.
