Mashed in with 4 gallons of 165° water for a final mash temp of 147°....settled to 144° (too low).
Held for 60 minutes.
Infused with boiling water till it hit 169°.....held for 10 minutes, then began sparging.
Sparged for a total of 8 gallons.....quick sparge @ 40 minutes (too fast).
Boiled for 90 minutes.....hops added at 60 and 5 minutes.....1/2 tsp of nutrient at 15 minutes.
Added three packets of dry yeast while wort was still in the high 50s or so (higher than advised).....no reconstitution or starter (in spite of strong suggestion).
Refractometer readings showed 1.035 @ 8 gallons (start of boil), 1.048 @ 6.5/7 gallons, and 1.058 @ 5.5 gallons (target was 1.050 @ 6 gallons).
Mark added 1 quart of distilled water (per my request) and suddenly, the OG dropped to 1.047 (really?!) and I had barely more than 5 gallons......($#!T!)
Multiple missteps, trips, stumbles and question marks.....but when all is said and done, it'll be beer.
I've adjusted batch size and efficiency to reflect actual numbers acquired.
Ferment at 48° for ten days, then raise to 60° for three days, then lager at 35°-40° for 3-6 weeks.....fingers crossed.
Was brewed on 11-17-19.
11-24-19: Krausen still present; gravity reading (per hydrometer) is 1.016 ..... target FG is 1.008 or lower.
Mark will move carboy indoors this afternoon to raise temperature to 60 or so.
11-28-19: Happy Thanksgiving! Mark called.....gravity reading @ 1.008.....fermentation is done. Mark will transfer to secondary and place in 34° cooler for two week lager. Will target December 14th for bottling.
Meanwhile, I revised the hop AA from 4.2 down to the actual 3.8....which brought IBUs down from 23 (1 over BJCP standards) to 20.....dead nuts perfect.
