I recently spent some time in Belgium where I sampled multiple Trappist/Trappist-adjacent beers. There were a lot of great brews, but some of my favorites were the seasonal, lower alcohol, lighter beers (roughly these ranged from blonds to singles). In contrast to (most of) the dubbels and trippels, these beers seemed to be all malt and a slight bit hoppier. I'm trying to recreate something like that here, but even the lower end of the spectrum of the trappist single style strikes me as potentially too bitter, depending on a lot of other factors (most notably just being balanced with pils and ending with a low FG).
A few other notable things with this beer: I'm going to try to mash on low end of the road. Additionally, in an attempt to make this beer even smoother than usual, I will experiment with using all the liquid in the mash. I have no idea what that will do to efficiency, but hopefully it will increase the numbers and lead to less extracted tannins from my BIAB method. It might not go so smoothly this first time around.
I'll likely try to follow this up with a stronger, partially sugar/syrup beer.
