Special Instructions

1.
Heat 8 gal of diluted (80%) strike water to 162 degrees in big kettle
2.
Add 3 grams gypsum, 5 grams calcium chloride, 4 grams Epsom
3.
Assume grain temperature is 76 degrees
4.
Add 3.2 gallons of strike water to mash tun while stirring in grains
5.
Mash temperature should be 152 degrees
6.
Let stand for 60 minutes
7.
Heat remaining water in large kettle to 175 degrees
8.
Recycle liquid from tun and pour back over grains until liquid is clear
9.
Slowly add water to grain bed and collect 6.5 gallons into small kettle
10.
Boil wort for 55 minutes
11.
Add chiller to boil for 5 minutes
12.
Add 1 teaspoon of Irish Moss
13.
Turn off flame and add 3 ounces of East Kent Goldings hops
14.
Let stand for 30 minutes (cooling from 212 to ~160 degrees)
15.
Cool wort to 75 degrees within 30 minutes
16.
Take hydrometer reading
17.
Transfer wort to primary fermenter (top off at 5 gallons)
18.
Pitch vial of Clarity Ferm
19.
Pitch dry yeast
20.
Seal fermenter and store at 67 degrees
21.
Add gelatin 3 days before bottling
