Mash Steps

No mash steps in this recipe

Special Instructions

1.
Calculate mash water volume at 1.5 qt water per lb grain
2.
Mash all grains for 1 hour at 152 degrees.
3.
Sparge at 170 degrees.
4.
One hour boil with hop regimen above.
5.
Cool to 70 degrees, aerate, and pitch yeast
6.
Ferment at 63-68 degrees.
7.
Rack to secondary and add dry hops for 1 week.
8.
Rack to Rye Whiskey barrel for 1 week.

Notes:

The beer is calming down quite nicely after setting for 3 months. Still some residual oak flavor, but much reduced and has oak and vanilla aroma. Rye spiciness is pronounced with the oak barrel being a rye whisky. Light to medium body that is red and consistently clear. The head is tan and firm and remains at 1/8" throughout. Good carbonation obtained from forced CO2. Bitterness lingers, but has 1st impression sweetness. Very impressed after initial taste disappointment. However, next brew session will not incorporate the oak barrel.

Notes:

Tasted before transferring to oak barrel. Very smooth and nice hop profile for rye beer. The whisky barrel is not a good choice for this lighter bodied ale. The oak added some sweetness and vanilla flavor that contrasts the rye and hops. Still drinkable, but the flavor was much more refreshing and hoppy before the oak and whiskey addition. I'll brew again and leave off step 8.
