Brew day 3/28/19. Didn't go with the traditional 50-60% wheat malt for a hefe (only doing about 40%). Mash: Ferulic rest at 113F for 20 minutes; sacch rests at 145 (20 minutes) and 155 (45 minutes). No sparging. 90-minute boil. Made a starter 48 hours prior to pitching. OG was 1.051. Bottled 4/9/19. FG was 1.010. Tasted great; can't wait for it to carb up. Added natural peach extract to 2 gallons (about 1 ounce).
