mash at 149 with everything but only 2 oz acid malt for 45 min
2.
at 14 oz acid malt, stir every 15 minutes for 45 total at 149
3.
raise to 168 to sparge. run off until 1.008 or 5.8 pH
4.
ferment at 68, crash to 40 for a week
5.
add salt and lactic acid to taste 2 oz/5 gal mildly tart. 3 oz - noticeably tart
