Special Instructions

1.
Sake: 6 cups of Rice (washed and soaked for 2 hours).
2.
Steam Rice for 1 hour. Chill to almost room temperature. Crush 2 Koji Balls and sprinkle onto the rice.
3.
Knead the rice & koji then place into fermenter bucket w/ water & Sake yeast for 30 days.
4.
After fermentation Strain the Sake from bucket & put into a secondary tank for clarity.
5.
Add Sake to wort at flame out. This kills off the sake strain from fermenting the beer.
6.
Add ale yeast to chilled wort and allow fermentation to finish the beer portion of the blend.
