Special Instructions

1.
Bring 7.9 gallons of water to 155°F and add grains (target 149°F). Hold for 60 minutes.
2.
Bring 250oz of the mash to boil and add back to the main pot to raise temperature to 162°F. Hold for 10 minutes.
3.
Remove grains and raise to a boil. Add sugars with 10 minutes left in the boil.
4.
Cool down to 65°F and add yeast. Ramp up to 78°F over a week. Transfer to secondary and ferment at 50°F.
