Special Instructions

Mash at 68 Celsius for 60 minutes, 15 minutes at 75

Boil 30 minutes 1 kg ginger (0.7 kg after peeling)

Ferment 55 litres at 17 C for 1 week

Add 1.4 kg honey. Boil 0.95 kg ginger (0.56 kg after peeling), 3 habanero, and 0.2 kg lemongrass for 10 minutes. Add 3 hours after the honey, stir a little to blend. About 3 litres.

Ferment for 14 days.

Coldcrash for 24 hours
