Special Instructions

Add Ph stabilizer in mash and Irish moss w/ 15 min left in boil

Chill wort to 68 and pitch yeast. Start fermentation at 60 for 2 days, then raise to 62 for 30 days, then raise 1 degree each day until temp reaches 68.

11 gal water for mash and 11 gal water for double sparge
