Notes:

Tasting 7/17 - The aroma is heavy banana with a touch of coffee. The flavor is slight coffee up front with a banana finish. We want to round out the profile with cacao nibs, and we want the coffee flavor to be more pronounced, so we're going to drop coffee and cacao into a dry-hop cylinder and see if we can add it to the serving keg.

Transferred from DH3K to serving keg after 17 hours. Cold-brew coffee experts recommend not letting the brew go longer than 24 hours.

Notes:

6.2 BRIX measured before bananas added, so estimated ABV of 6.3%. Added 6.825 lbs of banana/water puree (added small amount of water, pureed bananas, and brought to boil). Estimated final ABV once bananas ferment out would be anywhere from 6.3% to 7%.

Notes:

Brewed 7/1/18. Yield 5 gal at 1.062 OG / BRIX 15. Even with factoring in a greater efficiency for the corn sugar (mash efficiency below 100% results in an underutilization of straight fermentables), we hit 70% efficiency somehow. We came in 1/2 gal below target, but that's factored in too. The wort was a cloudy/murky light brown, which was unappealing. A starter was made for the Burlington yeast, as it was 6 months old, but it took off quickly. US05 added at aeration to supplement.
