Special Instructions

Pitch yeast cake from cream ale

Aerate 60 minutes with aquarium pump

Ferment in keggerator @ 68F

Covered fermenter with lid/airlock but did not tighten lid for 48 hours

Installed lid tightly, left in primary for 2 weeks 3 days, cold crashed to 45F 3 days

Rack to keg with gelatin, carbonate 50PSI/45F/24F

Notes:

Great IPA. Slightly hazy light orange with generous foamy head. Aroma is mild with distinct notes of pineapple, orange marmalade, and preserved lemon. Flavor is a beautiful blend of musty herbs and dried lemon peel. Bitterness is upfront but very balanced with some residual sweetness. Slight lingering bitterness and hop aftertaste which is surprisingly pleasant. Medium, satisfying body with a fairly but not too dry finish. I first thought this beer needed to be slightly more bitter, slightly less sweet and slightly drier but now I feel that this is basically my perfect IPA, showcasing moderation which increases drinkability.
