57% - Floor-Malted Bohemian Pilsner - DE
Strike water: 2g gypsum; 2g calcium chloride.
Sparge water: 2g gypsum; 2g calcium chloride.
Boil: 2g Kaffir Lime Leaf 30 min.
Boil: 9g coriander 10 min.
Carbonate to 2.6 volumes of CO2.

Notes:
Mouthfeel: pretty lean and dry. The saltiness is too much and gives the finish an undesirable roughness. Drinkability and Notes: it's right on the line between drinkable and one-and-done. The over seasoning is really what kills the drinkability. I'd like the beer to be softer and fluffier. Definitely need to dial back the salt and lose the unintended brett-funk.

At bottling: body, salinity, texture and flavor are all great. Crazy guava saltwater taffy note. Salt seems like it's at a good level.
