Special Instructions

1.
Steep cracked crystal malt in 1.5 qt of water at 150F for 30 minutes
2.
Strain the wort
3.
Add 2.5 qt of hot water to the wort and bring to a boil
4.
Add malt extract, heather, yarrow, and hops. Boil 1 hr.
5.
Add Irish moss and honey, boil an additional 30 min
6.
Remove from heat and rest 30 min
7.
Strain though muslin cloth into 1 gallon fermenting bottle
8.
Pour cold water through muslin to top off
9.
Cool to room temperature, aerate, and add yeast and cover and use blow-off tube for 24-36 hours
10.
Replace tube with air lock, ferment for 3-4 days
11.
Bottle and drink after 2 weeks

Overall very mellow and tasty. Much less bitter than expected.
