Notes: More complex grain bill, longer boil, hops in boil longer, higher mash temp, first keg hop, first partial boil, no extra chill, changes to NW water profile.
Partial Boil Process
1. Mash with 2 gallons of water, and 1g Gyps, 1g Eps, 1g CaCl (predicted pH 5.37)
2. Bring to a boil, add hops in proper time and add 2g Gyps, 1g Eps, 1g CaCl
3. After boil check gravity 20-21 (1.086) and add 2 gallons of cold water
4. That should result in 9-9.5 (1.037), and 3.5 gallons
Strike temp was 162, dropped to 155 at dough in. Low efficiency, must be slower when it's thicker. Pre-boil Brix was 14.9. Had to strain bag to get to 1.75 gallons. Definitely lower efficiency overall by a lot. Transfer and pitch went fine. Wort is very clear and darker than expected, with almost no trub in the fermenter. The water must have created significant cold break. 48hr in and it's got a big K. 1.009 (3.8) at dry hop, big hop character, maybe most ever at this stage. Dry hops floating on top. Shook on 1/28 and everything dropped. Tastes amazing. Did 1 day Keg hop, seemed to muddy the flavors. Also may be over carbonated and has a slight metallic flavor. Some bitterness that's harsh about 4 days in, seems overhopped too. Keg hop was a fail, at least with the cryo. The Centennial and Ekuanot are solid together but the Citra messed it up. Metallic note faded with lower carb and time. Took about two weeks.

Review: Clear straw. Moderate nose, with pine, cantaloupe, navel orange, and a dank note. Light body, pretty dry and bitter on the finish. Not great, but fine once it conditioned.
