Special Instructions

1.
Hydrate Yeast (boil some water to sanitize put into small jar when it cools down mix yeast in)
2.
Boil 2 Gallons of extra water early so it will cool off (in small kettle)
3.
Heat 4 Gallons of Strike water to 162deg (Heat the tun with the warm water)
4.
Pour into Tun and Mix in Grains.
5.
Check PH and adjust
6.
Let Mash for 60 Mins @ 150deg
7.
Heat 5 Gallons to HLT almost boiling. (sparge water)
8.
Check for iodine test throughout mash
9.
Batch sparge until wort is clear
10.
Fly sparge from what's left in HLT and collect in Big Kettle
11.
Add DME from Erlenmeyer flask
12.
Add more water to get to 6.5 Gallons
13.
Check Pre-Boil Gravity
14.
Boil for 60 mins adding Hops @30 min mark
15.
Add adjuncts @ 15 min left and put chiller in wort.
16.
cool the wort down
17.
While cooling make sure all is sanitized
18.
Check Post-Boil Gravity
19.
Top off with cooled water if necessary to get to 5.5 Gallons
20.
Pour into Fermentor
21.
Add 1 min of oxygen at 1psi
22.
Pitch yeast

Notes:

WOW ! Best brew yet.. so tasty !!! not sure if it tastes like cranberries since I don't actually eat cranberries, but it's sweet and has a very mellow beer tone. Not hoppy at all. Can't really tell how much alcohol percentage it is since secondary fermentation where I put in dried cranberries added extra sugars / alcohol.

Notes:

FG was 1.018, but I added cranberries also to secondary and this thing fermented away for another week and a half w/o stopping. I didn't want to ferment all the sugar from adding cranberry during secondary, so I bottled. It was carbonated already pretty much. So much so that the bubbles in the racking line were stopping the flow during siphon. Taste is good... a bit sweet, but that's kinda what I was going for. That explains the 1.018 FG. I'm more concerned about bottle bombs because I had already poured in 5oz of priming sugar and was already mixing in the beer by the time I realized how carbonated it already was.

    not 4.4%.. more like 7% probably because the software couldn't adjust for the extra sugar from cranberries in boil and also in secondary.
