Grain: 100% belgian pilsner malt just like DuPont Brasserie Hops: Warrior for bittering, Hallertau for flavor, Saaz for aroma Yeast: Going for the DuPont strain, pitched M29 due to 1.040 stall to speed up attenuation Water Profile: Yellow Dry 5.7pH during ferulic acid rest. 5.35pH sacc rest. 90 minute boil to reduce DMS. No airlock, just foil, until primary fermentation is complete

Special Instructions

1.
Ferulic mash - 4.5gallons with Gypsum 2.93g, NaCl 1.26g, and 1.0mL lactic

When starting to heat to achieve sacc rest, add 3.1mL lactic

Sparge - 4.0gallons with Gypsum 2.60g, NaCl 1.12, and 1.8mL lactic

Leave lid off during boil and cooling for DMS to drive off

Orange peel and coriander go in during whirlpool
6.
No airlock until primary fermentation is complete
7.
Will bottle and lay them on their sides during priming

Notes:

Pours one and a half fingers of foam that lingers. Color is straw and hazy. Aroma is strong clove. Flavor is strong clove to start and throughout, ending with some very slight wood and sour flavor with a pronounced honey on the breath after. Body is slightly silky with less carbonation sharpness than I'd expect based on priming level. I'm very pleased with this one but I want more peppery spice to it before I give it 5 stars. Next time, I will add some additional spices, pink and black peppercorns.
