Auðhumla rye wine, inspired by Põhjala Rukkivein. Per reiterated mash: Rye malt 4 kg Flaked Rye 0.25 kg (do not mill - add directly to mash) Choc rye 0.15 kg Pale malt 0.5 kg Flaked barley 0.25 kg (do not mill - add directly to mash) Melanoidin 0.15 kg Crystal 150 0.25 kg Special B 0.15 kg Mash 1: MASH WATER (L) 19 SPARGE WATER (L) 12 - sparge to reach 19l in Grainfather Water adjustments: Mash: 4g CaSO4, 4g CaCL2, 2g CaCO3 Sparge: 2.2g CaSO4, 2.2g CaCL2 Mash 2: SPARGE WATER (L) 18 - sparge to reach full boil volume Water adjustments: Sparge: 4g CaSO4, 4g CaCL2 Flaked rye & barley is pregelatainized and doesn't need to be milled. Just add it to the mash. Amplifies rye flavor.

Special Instructions

1.
Transfer approximately 7 liters wort to a wide pot, and boil separately on stove top.
2.
Transfer back to Grainfather before end of boil.
3.
Pitch at 18C and ferment at 16C for 7 days, increase to 20C until FG is reached, aprox 10 days.
4.
Transfer to secondary and bulk condition for 1 year.
5.
Bottle with 4g per liter priming sugar.
