Simple Pumpkin Ale using fresh pie pumpkins from The Brew Site ( http://www.thebrewsite.com/pumpkin-ale-recipe/). I'm brewing a small extract-hybrid batch just for fun using canned pumpkin 'cause garden pumpkins are not yet ripe.

Special Instructions

1.
cinnamon, nutmeg, allspice, ginger to taste. Roughly, as noted in "Other Stuff"
2.
45 oz. canned pumpkin - live pumpkins not ripe. Concerned about trub. Will steep separately at 155 (deg F), then strain into boil.
3.
Cool and pitch at 70(deg F), ferment at 68(deg F)

Notes:

Sam thin gray-green hue to the amber color. Much better head. Same as yesterday's full bottle. I can't smell. Much better.Tastes like beer, but not much like pumpkin beer. Additional carbonation (see Overall Impression below) smoothed out the sharp taste and there seems to be proper (that is beer like) mouth feel with a little bitterness lingering at the end. This was a half bottle. I ran out of beer and had just enough for a half when I was bottling. I thought I would see what happens to a 1/2 bottle. It came out better than the full bottle at this point. Maybe I'm overfilling my bottles, and suppressing the yeast's C02 production?! I will try filling less in my next run.

Notes:

coppery amber colour, looks a little thin. Not quite enough carbonation yet. Unfortunately for me, I have lost my sense of smell, so I can only say " it's not strong enough to register" still bitter and a little sharp. Not enough pumpkin spice to interest me. thin. Carbonation still low. Not too happy, so far. Will try again in a week.

    Disappointed in the high level of trub in the primary bucket. I lost a pint of wort to gravity testing and that left in the trub. Ended up with about 2.25 in secondary

    Disappointed in the final product. Color has a greenish tone from the pumpkin, but the flavor is one dimensional without enough pumpkin spice flavoring.

    After 6 weeks in the bottle, it is very, very good. However, now it's all gone!
