Special Instructions

1.
Roast yam/sweet potatoes at 375degrees for 15-20min, want them to be soft, but not toasty
2.
Measure out and combine grain, run through mill to crush
3.
Begin heating 12gal of water (11.5 needed) to 174 degrees
4.
Setup drain hose to pump, pump to mashtun
5.
Add grain, portion of Yam and water (6gal) to mash tun stir together.
6.
Mash temp should be 152 degrees
7.
Rest for 60min, during that time, heat remaining water to just under boiling.
8.
Begin draining mashtun, connect sparge arm to previously used pump
9.
Sparge at equal rate of drain keeping 1-2" of water on top of grain
10.
Place remaining yams in mesh bag, add to boil kettle along with wort and cinnamon sticks
11.
Bring to a boil and begin 60min timer
12.
Hop addition at 45min
13.
Hop addition at 30min
14.
Brown sugar and irish moss addition at 15min
15.
Setup cooling loop: Kettle, pump, chill plate, return to kettle
16.
Setup water loop: bucket with ice water, pump, chill plate, cooling coil w/fan, bucket
17.
At flame out, add nutmeg, make sure hop filter is in place open valve and turn on pumps
18.
Continue cooling loop until wort temp reaches 70 degrees add ice to bucket as needed
19.
Setup fermenter, spray with sanitizer
20.
Close kettle valve, move return hose to fermenter, reopen valve
21.
Recheck temp is in range, add yeast, close lid, insert CO2 blowoff

Notes:

Very sweet, a bit earthy from the potato, could use a bit more of the nutmeg, and hop. overall a solid beer, we'll see how it carbonates.
