Time for a stout. I want to focus on the chocolate flavor on this one. Despite the low level of Chocolate malt, I find that CaraBrown provides a distinct chocolate flavor, so I will bump that up. Grains: 2 Row for base, flaked oats and Millet and Kamut for body, Belgian kiln for maltiness, Carabrown for chocolate flavor, Midnight wheat for color, Pale Chocolate for flavor, lactose for body Hops: Bravo for bittering and Mt Hood for flavor Yeast: US-05 to showcase the malts

Special Instructions

Mash: 6 gallons with 1.50g Gypsum, 1.50g CaCl, 0.75g NaCl, and 0.75g Baking Soda
2.
Sparge: 2 gallons with 0.50g Gypsum, 0.50g CaCl, 0.25g NaCl, and 0.6mL lactic
3.
Add lactose, whirlfloc, and yeast nutrient with 15 minutes to go in boil

Notes:

Pours black and 3 fingers of foam. Aroma is slightly sweet, toasted bread that ends with a slight yeast aroma. Flavor is nutty with slight coffee, almost a slight ash flavor, and then some yeast phenolic. Body is a little more than medium and has high nucleation sharpness. Overall, not too bad but I'd like a denser body and more nut and bread flavor, maybe some richer chocolate. I was going for chocolate milk and that is not there. 3 stars as I enjoy the beer okay but it is not what I wanted.
