Special Instructions

1.
Make a juniper branch infusion, using fresh juniper, preferably without the berries, esp green ones.

Use 1/2 shopping bag juniper branches, and let sit in mash water @75C for 30 mins. Use this as strike water.

Reuse branches for sparge water

Boil for 4h. Kettle caramellization is crucial for this beer, and the Grainfather isn't good at that. At boil, take 5-6 liters wort from the Grainfather and boil down to a dark caramel on your stove top. Add back to the Grainfather.

Pitch and frement at 40C for 4 days, bottle with no priming sugar

Alternatively, let sit for one more day, then prime with 3g sugar per liter.

Carbonation is done in 2 days at 40C
