Special Instructions
1.cook honey in crockpot on low stirring occasionally until desired color/taste
2.roast sugar pumpkin in 350F oven for 1hr, add to primary bucket, mix 1 gallon of water with cooked honey
3.top up primary with enough water at 70F, rehydrate 2 packages of yeast, pitch and ferment at 60F
4.after 5 days raise fermenting temps to 70F til gravity stabilises
5.transfer to secondary adding nutmeg, cinnamon and oak cubes
6.after 1 month in secondary rack to bottling bucket with 3.5 oz of table sugar and some rehydrated D-47 yeast
