Mash Steps

Special Instructions

1.
Mash at ~148 degrees F, then sparge
2.
Bring up to ~160 degrees and hold for 15 minutes to kill anything and drive off O2
3.
Cool to ~120 degrees F
4.
In a bag, add 1# 2-row and let sit ~30 minutes (to introduce the lactobacillus)
5.
Remove the bag of grain, carefully syphon into a carboy (filling to the top) or in your brew kettle, putting plastic wrap over the surface of the wort
6.
Keep at ~120 degrees F (or as close as possible) for 3 days
7.
Return to brew pot, add hops and boil 15 minutes
