How I calculated the production malt percents:
1- Start using Craig's homebrew proportions (76, 12, 6, 6)
2- Scale to an OG of 1.063.
3- Add 0.357 lbs/gallon of base to simulate the change going to production
4- Set the yeast to WLP001 (AA 70%)
5- Scale to 6.5% ABV
6- Scale to your batch volume
** The scaled numbers for 5.5 gallons eerily turn out to be EXACTLY lined up on 0.25 lbs increments!
How I calculated the hops additions:
Totally ballparked. AA percents have changed since 1998. Flavor and aroma are not my specialty.
Mash rests:
With 15.5% crystal, I'm guessing we should favor beta amylase. Mop up with a short alpha amylase rest.
