Corn sugar in recipe represents Mott\u0027s S.G. and carbonation. \n\nUsing Xylitol to back-sweeten before carbonation (5 oz. corn sugar for 5 gallons).\n\nNOTES: Pitched at 64 F or so. Subsequently over-cooled carboy to 56-58 and all CDB yeast flocculated to the bottom of the carboy with little bubbling. There wasn\u0027t much yeast either. Tried to shake it to rouse the yeast but it was too full of carbonation. Tested S.G. at 1.040. Brought temperature back up to 64-66 F and it\u0027s been bubbling away for a couple of days, but very slowly.
