Used (1) one packet of Red Star's Cote Des Blancs dry wine yeast (5 grams) in 5 gallons Mott's apple juice.
Cool juice to 64 F or less before pitching yeast! Cote Des Blansc works best with cider at 64-66F so keep cider in brew bag with (2) 2-liter bottles of frozen water at 60-64F! Corn sugar in recipe represents Mott's S.G. and carbonation.
Using Xylitol to back-sweeten before carbonation (5 oz. corn sugar for 5 gallons).
NOTES: Pitched at 64 F or so. Subsequently over-cooled carboy to 56-58 and all CDB yeast flocculated to the bottom of the carboy with little bubbling. There wasn't much yeast either. Tried to shake it to rouse the yeast but it was too full of carbonation. Tested S.G. at 1.040. Brought temperature back up to 64-66 F and it's been bubbling away for a couple of days, but very slowly. Not sure what's going on -- will test again.
