Mash Steps

Special Instructions

1.
Mash in at 125 - hold 15 mins
2.
Heat to 145 - hold 30 mins
3.
Remove 2 gallons thick mash and heat to 156 - hold 15 mins
4.
Boil thick mash for 15 mins, constant stirring
5.
Add back and hold at 156 for 30-45 mins
6.
Mash out at 170
7.
Pitch yeast at 50 dg and free rise to 54-55 dg and hold until complete
8.
Diacetyl rest at 65 for three days
9.
Cold crash and lager in keg for 4-5 months.
