Once upon a time there was a brewer here in Colorado Springs called Back Alley Brewing, they went out of business in 1999' and they made a brew called Sugar Daddy Porter. This has always been my wife's favorite beer and she asked me to try and replicate it. So this is what I'm going to try. It needs to be slightly smoky and sweet with something like brown sugar, maybe a hint of maple and a touch of coffee. A lighter medium body coming from a dark brown, near black brew and just enough bitterness to off set the sweetness. I plan on using brown sugar, molasses and a bit of maple syrup for the sweet side. Then I'm going to smoke the specialty grains in my smoker. For bitterness I'll use a bittering hop that doesn't impart much if any flavor. Last I may added a fruity finishing hop and the wife's favorite coffee just to make it a little unique. Hope this works out.

Special Instructions

1.
Some time before brewing, I plan on doing this the day before, smoke the grain for 1-2 hours, I think this should be done at a low temp around 175° to maybe 200°. I'm going to use the wood from the secondary of my Sanctuary Stout to do the smoking.

Also the day before brewing get a yeast starter going.

Bring 2 gal water to 160° put in the grains and hold temp to 150°-160° for 25mins. While the grains are steeping heat 1 gal of water to 160° in a separate pot. At the end of the steep put grain in a strainer and rinse with the heated water.

Take preboil gravity reading (_________) and bring back up to a boil

Add LME and bring back to boil at (this is time A____:____) add 1oz Brews Gold hops.
6.
At (A plus :15 ____:____) add .5oz Brews Gold.
7.
At (A plus :30 ____:____) add .5oz Brews Gold.
8.
At (A plus :42 ____:____) add .5oz Cascade.
9.
At (A plus :50 ____:____) add 1tsp Irish Moss, both sugars & molasses.
10.
At (A plus :55 ____:____) add 2tsp Yeast Nutrient, vanilla beans & maple syrup.
11.
At (A plus :60 ____:____) turn flame off and add .5oz Cascade and 6 oz coffee. stir in well, let steep 10 min.
12.
Cool wort and add water to bring volume up to 5.5gal and temp to 70°. Take gravity reading (B-_____/OG-_______), pitch yeast at (____:____) and aerate.
13.
Rack Day ___ /___ /___ Brix -_____ This gives me a R.G. of ______

Notes:

Color is black with good carbonation and a thick rocky brown head. Aroma is dry nutty and roasted with coffee and just a hint of smoke in the back. It has a bold medium that gives a creamy mouth feel. Flavor is big deep roasted coffee and a little nutty taste. There seems to be a note of sweetness and just a hint of smoke. In the after taste the coffee bowls over everything with an almost harsh bitterness. So in the end I way over did the coffee, it dominates the flavor and covers the smoke, vanilla and maple completely. Overall it's drinkable and I kind of like it, but it's not even close to what I wanted. I'll need to rework it to get a little closer to what I want out of it.
