Did you think about using a US 2-row pale malt instead of the Maris Otter as I find the Maris Otter very distinctive (biscuity).

Also, how about a SAFALE-US-05 or a DANSTAR DRY-97 (West Coast) yeast rather than the English Dry Ale yeast (SAFALE-S-04).

Only using Maris because I buy in 25 kg sacks and have a few kg to use!! Safale-S-04 didn't get me to final SG needed to align with the American Pale Ale scales on Brewgr
