Special Instructions

Prepare lacto starter 2 to 3 days before

66.6C for 1hr (or as low as 64.5 for a dryer beer)

Mash without Accidulated malt for 45mins and then add for additional 30mins (1hr 15 in total)

Sparge
5.
Raise to the boil, 10min rest
6.
Chill to 43C and pitch Lacto starter
7.
Cover with cling wrap
8.
Hold temp under 45C. Check every 6 to 12hrs for desired sourness
